These are truly scrumptious cake recipes for diabetics. Looking for the best diabetic cake recipe? Look no further, we have some amazing diabetic desserts.

The first is a bit of a personal favorite. My mother used to make this for me growing up. It is a sour cream coffee cake. Good stuff!

The second cake recipe is a show stopper. This is a remarkable and delectable upside down cranberry cake. Trust me, you never had this good before.

Sour Cream Coffee Cake

While not a traditional "cake," this dessert is one of my favorite cake recipes for diabetics.

Cake Ingedients

Ingredients Amount
Stevia Powder 4 tbs
Sour Cream, Fat Free 8 oz.
Salt Pinch (0.5 tsp)
Butter, unsalted, light 1 Cup
Baking Powder 1 tsp
Eggs 2
Flour 2 Cups
Vanilla Extract 0.5 tsp

Filling Ingredients - Cake Recipes for Diabetics

Ingredients Amount
Brown Sugar 1/2 cup
Flour 1/3 Cup
Butter, unsalted, light 2 tbs
Cinnamon 1 tsp

Baking Instructions

  1. Pre-heat the oven to 350 degrees Fahrenheit and treat a 9 x 13 inch baking pan with fat free cooking spray.
  2. First the batter. Thoroughly mix the butter and Stevia Powder. Next, combine and mix the eggs, sour cream and vanilla extract. Finally, combine and mix the flour, salt, and baking powder, then pour half of the batter mixture into the pan.
  3. Now the filling. Combine all of the ingredients and mix thoroughly: melted butter, cinnamon, flour, and brown sugar. Dust the cake batter in pan with half of the filling mix.
  4. Pour remaining batter in pan and then dust top with remaining filling mix.
  5. Bake the cake for 35 minutes. You may have to adjust bake time longer or shorter depending upon your oven. Keep an eye on it. An easy way to check is with the toothpick test. Stick the tooth pick in the middle. If it comes out clean, you’re done! Cut into 18 servings.

Upside Down Cranberry Cake

Great cake recipes for diabetics are often hard to find, so we are happy we found this one. For some reason, an upside down cake does not get a lot of attention. People just don't seem to make it. Too bad. This cake recipe for diabetics is simply amazing. We hope you agree.

Cake Ingedients

Ingredients Amount
Stevia Powder 2 tbs
Sour Cream, Fat Free 8 oz.
Salt Pinch (0.25 tsp)
Butter, unsalted, light 1/2 Cup
Baking Powder 2 tsp
Eggs 2
Flour 2.5 Cups
Vanilla Extract 1 tsp
Fat Free Milk 1/2 Cup
Lemon Juice 0.5 tsp
Flour 1.5 Cups

Filling Ingredients

Brown Sugar 1/2 cup
Cranberries 1 Cups
Butter, unsalted, light 5 tbs
Cinnamon 1 tsp

Baking Instructions

  1. Pre-heat oven to 350 degrees Fahrenheit and spray a non-fat cooking spray on a 9 inch diameter round cake pan.
  2. First the batter. Mix the flour, salt and baking powder and set aside.
  3. Next, combine the stevia powder and butter. Mix in the vanilla extract and egg yolks. Now, combine with the flour, baking powder and salt mixture. Add the milk and mix well.
  4. Next, beat the egg whites and lemon juice until firm. Combine with cake batter. And set aside.
  5. Now the Topping. Combine butter and brown sugar in saucepan and cook over medium heat until the sugar has fully dissolved and butter is melted. When the mixture has started to caramelize, remove from heat and pour evenly over the bottom of the cake pan. Spread cranberries evenly along the bottom of the pan.
  6. Next, take the batter mix in the cake pan evenly.
  7. Bake for approximately 25 to 30 minutes. The cake will be done when it turns brown and begins to pull away from the sides.
  8. Remove from oven and let cool. After approximately 20 minutes, take a knife and run it around the pan. Turn cake pan over and the cake should pop out! Cut into 12 servings.
