Diabetic Apple Pie Recipe


Scrumptious diabetic apple pie recipe! So good, the apples seem to melt in your mouth! Let's start baking.

Creating a pie that is suitable for the diabetic diet is one of the hardest cooking challenges. Often the filling is overly sweet or full of carbohydrates. However, the pie crust itself is where the challenge really lies.

A Note on the Crust. We scoured many recipes, but ultimately settled on a store bought crust. Depending upon what type of pie you are making, the Keebler Ready Crust, Shortbread or the Reduced Fat Graham Cracker is our first choice. They are pretty close to being the same caloric, carbohydrate, etc. count. No other recipe from scratch seemed to stand out.

Also, while we have stuck with the traditional 8 servings per pie, you may want to stretch it to 10 servings, as pies are packed with calories! Sorry.

Now on to the recipe!

Apple Pie Recipe

Ingredients Amount
Stevia Powder 2 TBS.
Flour 1/4 Cup
Cinnamon 1 tsp.
Nutmeg 1/2 tsp.
Apples 6
Flour 1/4 Cup
Stevia Powder 1 TBS.
Olivio (butter Substitute) 3 TBS.

Baking Instructions

  1. Pre-heat oven to 350 degrees Fahrenheit.
  2. Filling. Mix stevia powder, 1/4 cup flour, nutmeg and cinnamon. Core and chop the apples then put in bowl with dry ingredients. Lightly toss/mix together to coat apples. Put ingredients into prepared 9 inch Keebler Shortbread Ready Crust.
  3. Topping. Take 1/4 cup of flour, stevia powder and olivio and mix together. This mix should be crumbly in texture. Distribute evenly over pie.
  4. Put in oven and bake for approximately 40-50 minutes. Allow to cool and cut into 8 servings. Again, you may want to make smaller servings.
