Diabetic Banana Bread Recipe

It's Monkey Good!


Amazingly sweet diabetic banana bread recipe! So good, you may have monkeys coming to your house for a snack! Maybe the best banana bread you've ever had?

While this banana bread does have a lot of calories, 185 grams, and carbohydrates, 29 grams, it only has 9 grams of sugar. We have put it in the diabetic dessert section because it does taste so good.

If you want to lower the sugar, carbohydrate and calorie content, try using only stevia powder in place of the brown sugar. Also, don't be afraid to substitute some whole grain flour for the white flower variety.

Diabetic Banana Bread

Ingredients Amount
Stevia Powder 1 Tbs
Olivio 1/2 Cup
White Flour 2 Cups
Brown Sugar 1/4 Cup
Bananas, Overripe, Mashed 2 Cups
Egg Whites 4
Baking Soda 1 tsp.
Salt Pinch

Baking Instructions:

  1. Preheat oven to 350 degrees Fahrenheit and spray non fat cooking spray on a 9x5 bread pan.
  2. Mix bananas, sugar , stevia powder and egg whites. Then, mix in the mashed bananas. In a separate bowl, combine the flour, baking soda and salt.
  3. Combine the two mixes and sir to blend. However, do not over stir. Just make sure the mixture is moist. Pour batter into the pan.
  4. Bake for approximately one hour, then cool for at least 10 minutes and remove from pan. Makes 12 servings.
