Ingredients

  • 1 tablespoon Stevia Powder
  • 2 tablespoons Butter, unsalted
  • 3/4 cups White Flour
  • 3/4 cups Whole Grain Flour
  • Salt Pinch
  • 1 Egg
  • 2 teaspoons Baking Powder
  • 1 tablespoon Canola oil
  • 1 cup Blueberries
  • 1/2 cup Fat Free Milk

Directions

Step 1. Pre-heat oven to 400 degrees Fahrenheit and use some fat free cooking spray to grease a 12 muffin baking pan.
Step 2. Beat egg white and oil together. Combine with milk and melted butter. Set aside.
Step 3. Combine dry mix ingredients: Flour, baking powder, stevia powder, salt.
Step 4. Combine both mixes, then gently mix in blueberries. Do not over mix. Scoop batter evenly into the muffin pan.
Step 5. Bake until tops are golden brown, approximately 20 minutes. One serving is one muffin.
