Diabetic Carrot Cake Recipe

Cake Ingredients:

Ingredients Amount
Canola Oil 1/2 Cup
Apple Sauce, Unsweetened 4 oz.
Vanilla Extract 2 tsp.
Stevia Powder 4 tbs.
Whole Grain Flour 2 cups
Eggs 4
Chopped Walnutes 1 Cup
Baking Powder 2 tsp.
Baking Soda 2 tsp.
Grated Carrots 3 Cups
Cinnamon 2 tsp.
Crushed Pinapple 1/2 Cup
Salt 1 tsp.

Frosting Ingredients:

Ingredients Amount
Fat Free Cream Cheese 3 oz.
Butter, Unsalted, Light 1 tbs.
Vanilla Extract 1 tsp.
Confectionary Sugar 2 Cups
Fat Free Milk 2 tbs.

Cake Baking Instructions

  1. Pre-heat oven to 325 degrees Fahrenheit and spray no fat cooking spray on a 9 x 13 inch baking pan.
  2. Stir the eggs, applesauce, stevia powder and canola oil together in a large bowl.
  3. Next, add the flour, salt, cinnamon, whole grain flour, baking powder, baking soda. Mix well.
  4. Now, add the pineapple, vanilla extract, walnuts, and carrots.
  5. Pour into the pan and bake for 40-50 minutes. Check often as cooking time can vary. An easy way to check is with the toothpick test. Stick the tooth pick in the middle. If it comes out clean, you're done!
  6. Allow to cool completely before frosting.

Frosting Instructions

  1. Combine and mix the cream cheese, confection sugar, vanilla extract, milk and the butter. You may need to add a little more milk in order to get a spreadable consistency of the frosting.
  2. Now frost, cut into 20 servings then eat!
