Cookies are great for diabetics. Sure most dieticians would tell you to avoid all desserts. But humans being humans, we want our desserts, even if we are diabetic. Cookies are great because they taste great and they come in small packages. This means easy and reasonable serving sizes.

Besides chocolate chip, our favorite diabetic cookies are the oatmeal cookie and what we like to call "Dreamy Cookies."

Diabetic Oatmeal Cookies

Ingredients Amount
Stevia Powder 2 tbs
Olivio 2/3 Cup
White Flour 1 Cup
Vanilla Extract 1 tsp.
Water 1/4 Cup
Eggs 1
Baking Soda 1/2 tsp.
Rolled Oats 3 Cups
Cinnamon 1 Tsp.
Brown Sugar 1/2 Cup (Packed)

Baking Instructions

  1. Mix all of the ingredients together and refrigerate batter overnight or at least for several hours. The mixture needs to thicken prior to baking.
  2. Pre heat oven to 350 degrees Fahrenheit and lightly spray non-fat cooking spray on no stick cookie sheet.
  3. Place rounded dollops of dough onto pan. There should be enough dough for 30 cookies. Bake for 10-13 minutes, or until lightly brown. Let cool and eat. 1 cookie per serving.

Dreamy Diabetic Cookies

Ingredients Amount
Stevia Powder 1.5 TBS
Olivio 3/4 Cup
White Flour 2 Cup
Vanilla Extract 1 tsp.
Salt 0.5 Tsp.
Egg Whites 3
Baking Soda 1/2 tsp.
Baking Powder 1.5 TSP
Canola Oil 2 TBS
Butter Milk, Low Fat 1/2 Cup

Baking Instructions:

  1. Pre-heat oven to 350 degrees Fahrenheit and spray non-fat cookie spray on baking sheet.
  2. Mix dry ingredients together in mixing bowl and set aside.
  3. Do yourself a favor and get your mixer out for this step. Combine and mix the Olivio, oil, vanilla extract and egg whites. Combine dry mix and buttermilk and mix thoroughly. You may need to add a little water to get proper consistency.
  4. Place rounded dollops of dough onto pan. There should be enough dough for 36 cookies. Bake for 8-10 minutes. Do not over bake. Once the cookies do not cave-in or indent, to the touch, they are ready. Let cool and eat. 1 cookie per serving.
