Diabetic Minestrone Soup Recipe

Ingredients

  • 2 cloves Garlic (Minced)
  • 3/4 cups Onion (Chopped)
  • 1 tablespoon Olive Oil
  • 5 cups Chicken Broth (Low Sodium)
  • 1 can Tomato Paste (6 oz., Low Sodium)
  • 1 cup Green Cabbage (Shredded)
  • 1 cup Zucchini (Diced)
  • 1/2 cup Celery (Diced)
  • 1 Medium Carrots (Diced)
  • 1 can Garbonzo (16 oz., Drained)
  • 1/3 cup Elbow Macaroni (Dry, Uncooked)
  • 1 tablespoon Dried Basil
  • 1/2 teaspoon Oregano
  • 1/8 teaspoon Pepper

Directions

Step 1. In a large Dutch oven, fry the onion and garlic in the olive oil until golden brown, about 4-5minutes.
Step 2. Add the chicken broth and tomato paste then bring to boil. Now combine all of the other ingredients, cover and reduce heat to a simmer.
Step 3. Simmering should take about 15-20 minutes, but you want to make sure the vegetables and macaroni are tender, so keep an eye on the pot, as it could take longer.
