Everyone Loves a Good Muffin!


Here are our favorite Diabetic muffin recipes. There is just something about waking up to a good muffin, especially if it a blueberry muffin!

Having trouble deciding which recipe to try first? Why not combine them? Follow the bran muffin recipe, but add a cup of blueberries. Nice! Don't like blueberries? Either of these recipes would be great with cranberries, boysenberries, etc.

Diabetic Blueberry Muffin Recipe

Ingredients Amount
Stevia Powder 1 tbs
Butter, unsalted 2 tbs.
White Flour 3/4 Cup
Whole Grain Flour 3/4 Cup
Salt Pinch
Eggs 1
Baking Powder 2 tsp.
Canola oil 1 tbs
Blueberries 1 Cups
Fat Free Milk 1/2 Cups

Baking Instructions - Diabetic Muffin Recipes

  1. Pre-heat oven to 400 degrees Fahrenheit and use some fat free cooking spray to grease a 12 muffin baking pan.
  2. Beat egg white and oil together. Combine with milk and melted butter. Set aside.
  3. Combine dry mix ingredients: Flour, baking powder, stevia powder, salt.
  4. Combine both mixes, then gently mix in blueberries. Do not over mix. Scoop batter evenly into the muffin pan.
  5. Bake until tops are golden brown, approximately 20 minutes. One serving is one muffin.

Diabetic Bran Muffin Recipe

Bran muffin's seem to get a bad rap. Everyone thinks they are for older people who need extra dietary fiber. If you are older, then so what? You can't be bothered with what people think! If you are younger, well, then you don't know what you are missing.

But because we want you to try this great diabetic bran muffin recipe, we suggest you add some cranberries or other fruit to sweeten things up.

Ingredients Amount
Stevia Powder .75 tbs
Brown Sugar 2 tbs.
Whole Grain Flour 1 1/4 Cup
Quaker Oat Bran Cereal 1 1/2 Cup
Salt Pinch (0.5 tsp)
Egg Whites 2
Baking Powder 1 tbs.
Olive oil 1 tbs
Fat Free Milk 1 1/2 Cups

Baking Instructions

  1. Pre-heat oven to 400 degrees Fahrenheit and spray no fat cooking spray onto a 12 cup muffin pan.
  2. Combine the flour, stevia powder, baking powder and brown sugar. Set aside. Soak bran cereal in milk for 5-7 minutes, then combine and mix oil and egg whites. Combine all ingredients and spoon mixture evenly into muffin cups.
  3. Bake until tops are golden brown, approximately 20 minutes. One serving is one muffin.
