This first tasty treat is a no top blueberry pie that is sure to a top choice. The apple rhubarb pie is no slouch either! Try them both and see which one is your favorite.

Diabetic Blueberry Pie

Ingredients Amount
Stevia Powder 1 Tbs.
Corn Starch 2.5 Tbs.
Lemon Juice 1/4 Cup
Water 3/4 Cup
Blueberries 4 Cups
Olivio (butter substitute) 1 Tbs.
Salt Pinch

Baking Instructions

Did we mention this was a "no bake" pie? Well it is!

  1. Combine all of the ingredients, except the Olivio and 3 cups of the blueberries in a medium pan. Cook over medium heat until the mixture begins to thicken, approximately 8 minutes. Stir often.
  2. Add butter and let sit for 5-6 minutes. Then, add the remaining 3 cups of blueberries.
  3. Pour mixture into a Keebler Graham Cracker 9 inch pie crust. Refrigerate for 3-4 hours, and then serve. Makes 8 servings, but consider cutting into 10 servings.

Diabetic Rhubarb Pie Recipe

We have taken an old faithful and added a twist, apples! But be careful with this one. Appels have a lot of calories and sugar, so we had to decrease the serving size and it still packs a caloric, carb and sugar punch!

Ingredients Amount
Stevia Powder 2 Tbs.
Corn Starch 1 Tbs.
Rolled Oats 1/2 Cup
Rhubarb 4 Stalks
Apples 5
Olivio (butter substitute) 4 Tbs.
Brown Sugar 1/4 Cup (packed)
Cinnamon 2 Tsp.

Baking Instructions:

  1. Pre-heat oven to 430 degrees Fahrenheit.
  2. Filling. Put chopped apples and rhubarb in large mixing bowl and set aside. Combine stevia powder and cinnamon in smaller bowl. Sift over fruit and toss together. Spread fruit mixture evenly in 9 inch Keebler Light shortbread pie crust.
  3. Crumble. Combine Olivio, brown sugar, and oatmeal. Mix thoroughly and sprinkle evenly over pie.
  4. Bake for 35 to 40 minutes or until done.
