Tasty and smooth diabetic pumpkin pie recipe. Even better, it is a no-bake recipe. We are confident you will never need another recipe again! Regardless of when you make this pumpkin pie, we know it will feel like Thanksgiving in New England.

Pumpkin Pie

Ingredients Amount
Stevia Powder 1 TBS.
Unflavored Gelatin .25 oz.
Cinnnamon 1 Tsp.
Olivio (butter substitute) 1/4 Cup
Eggs 2
Ginger 1/2 Tsp.
Nutmeg 1/2 Tsp.
Salt 1/2 Tsp.
Pumpkin Puree (One Pie) 15 oz. Can
Nonfat Instant Dry Milk 1 Cup
Boiling Water 1/3 Cup

No-Baking Instructions

  1. In a large saucepan, combine all ingredients, BUT the pumpkin puree. Mix well and let stand for several minutes when done.
  2. Next, heat over low heat, stirring constantly until gelatin dissolves and mixture begins to thicken. Should be about 10 minutes.
  3. Remove from heat and stir in the pumpkin puree. Pour mixture into Keebler 9 inch Low Fat Graham Cracker Pie Crust.
  4. You need to chill, this pie, for about 3 hours before serving. Makes 8 servings.
