While not a traditional “cake,” this dessert is one of my favorite cake recipes for diabetics.

Ingredients

  • 4 tablespoons Stevia Powder
  • 8oz Sour Cream, Fat Free
  • 0.5 teaspoon Salt Pinch
  • 1 cup Butter, Unsalted, Light
  • 1 teaspoon Baking Powder
  • 2 Eggs
  • 2 cups Flour
  • 0.5 teaspoon Vanilla Extract
  • 1/2 cup Brown Sugar
  • 1/3 cup Flour
  • 2 tablespoons Butter, Unsalted, Light
  • 1 teaspoon Cinnamon

Directions

Step 1. Pre-heat the oven to 350 degrees Fahrenheit and treat a 9 x 13 inch baking pan with fat free cooking spray.
Step 2. First the batter. Thoroughly mix the butter and Stevia Powder. Next, combine and mix the eggs, sour cream and vanilla extract. Finally, combine and mix the flour, salt, and baking powder, then pour half of the batter mixture into the pan.
Step 3. Now the filling. Combine all of the ingredients and mix thoroughly: melted butter, cinnamon, flour, and brown sugar. Dust the cake batter in pan with half of the filling mix.
Step 4. Pour remaining batter in pan and then dust top with remaining filling mix.
Step 5. Bake the cake for 35 minutes. You may have to adjust bake time longer or shorter depending upon your oven. Keep an eye on it. An easy way to check is with the toothpick test. Stick the tooth pick in the middle. If it comes out clean, you’re done! Cut into 18 servings.
