Wild Rice Casserole Recipe

This is a perfect wild rice casserole recipe. Pair with a chicken or beef main entrée and another vegetable and you are in business! Great low fat, lower carb, diabetic friendly side dish.

Wild Rice Casserole Recipe

Ingredients

  • 1 cup Wild Rice (Dry)
  • 3 cups Chicken Broth (Low Sodium)
  • 1/4 cup Onion (Chopped)
  • 1/2 cup Mushrooms (Chopped)
  • 1/4 teaspoon Pepper
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Sage

Directions

Step 1. Sauté onions and mushrooms in a medium saucepan, using some non-fat olive oil cooking spray.
Step 2. When browned, add all remaining ingredients. Bring to a boil then cover and simmer for approximately 40-50 minutes or until rice is tender.
