Ingredients
- 1 tablespoon Stevia Powder
- 2 tablespoons Butter, unsalted
- 3/4 cups White Flour
- 3/4 cups Whole Grain Flour
- Salt Pinch
- 1 Egg
- 2 teaspoons Baking Powder
- 1 tablespoon Canola oil
- 1 cup Blueberries
- 1/2 cup Fat Free Milk
Directions
Step 1. | Pre-heat oven to 400 degrees Fahrenheit and use some fat free cooking spray to grease a 12 muffin baking pan. |
Step 2. | Beat egg white and oil together. Combine with milk and melted butter. Set aside. |
Step 3. | Combine dry mix ingredients: Flour, baking powder, stevia powder, salt. |
Step 4. | Combine both mixes, then gently mix in blueberries. Do not over mix. Scoop batter evenly into the muffin pan. |
Step 5. | Bake until tops are golden brown, approximately 20 minutes. One serving is one muffin. |
