Ingredients

  • 4 cups Cole Slaw (Shredded)
  • 1/2 cup Celery (Finely Chopped)
  • 1/4 cup Onion (Finely Chopped)
  • 1/3 cup Vinegar
  • 1 tablespoon Olive Oil
  • 1 tablespoon Sugar
  • 1/2 teaspoon Celery Seed
  • 1/4 teaspoon Dry Mustard
  • 1/4 teaspoon Salt

Directions

Step 1. Prepare ingredients as described above.
Step 2. Combine all ingredients in a large bowl and mix thoroughly. Chill of at least an hour and then serve.

Ingredients

  • 1 cup Wild Rice (Dry)
  • 3 cups Chicken Broth (Low Sodium)
  • 1/4 cup Onion (Chopped)
  • 1/2 cup Mushrooms (Chopped)
  • 1/4 teaspoon Pepper
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Sage

Directions

Step 1. Sauté onions and mushrooms in a medium saucepan, using some non-fat olive oil cooking spray.
Step 2. When browned, add all remaining ingredients. Bring to a boil then cover and simmer for approximately 40-50 minutes or until rice is tender.

  • 1 packet Italian Beans (10.5 Ounces, Frozen)
  • 1.5 cups Garbanzo Beans (Rinsed)
  • 4oz Green Chilies (Drained)
  • dash Hot Sauce
  • 1 can Corn (Low Sodium, 16 Ounces)
  • 1 can Tomatoes (Low Sodium, 16 Ounces)
  • 1 teaspoon Chili Powder
  • 1 cup Monterey Jack Cheese (Shredded)

Directions

Step 1. Pre-heat oven to350 degrees Fahrenheit.

  • 1lb Potatoes
  • 2 cups Skim Milk
  • 2 cloves Garlic (Chopped)
  • 1/2 teaspoon White Pepper

Directions

Step 1. Peel and dice the potatoes. Put in a pot of water and bring to boil. Cook until tender, approximately 20 minutes. Drain water.
Step 2. Cook remaining ingredients in a separate pan on low heat for about 25 minutes. You want the garlic to be soft.
Step 3. Add sauce to the potato pot and smash with a potato smasher until smooth. You can use an electronic mixer if you prefer for an even smoother consistency.

Ingredients

  • 1 teaspoon Olive Oil
  • 1/4 cup Onion (Chopped)
  • 2 tablespoons Flour
  • 1 cup Skim Milk
  • 1/3 cup Swiss Cheese (Shredded, Reduced Fat)
  • 1 teaspoon Sugar
  • 1/4 teaspoon Salt
  • 16oz Green Beans
  • 1 cup Stuffing Mix
  • 1 teaspoon Margarine

Directions

Step 1. Pre-heat oven to 350 degrees Fahrenheit.
Step 2. Cook onions in a medium saucepan with the olive oil for about 3-4 minutes over medium to high heat.
Step 3. Next add the flour and cook for an additional minute. Stir continuously. Blend in the milk, sugar, cream cheese and salt. Make sure you keep stirring. Cook until it begins to thicken. This should be about 5 minutes.
Step 4. Spread the green beans evenly in an oven friendly baking dish. Add the sauce. Add the stuffing to the baking dish.
Step 5. Bake the casserole for about 20 to 25 minutes. Casserole is done when it is thoroughly heated.
