Diabetic Cheesecake Recipe

This New York Style cheesecake is one of my personal favorites: Simple, yet elegantly sophisticated. You can never go wrong serving this to guests.

We have turned this traditional favorite on its head by using stevia powder instead of the sugar. What do you get? A delicious cheesecake for under 200 calories and only 8 grams of sugar per serving!

Ingredients

  • 15 Graham Crackers
  • 2 tablespoons Butter, Unsalted, Light
  • 8oz Cream Cheese, Low Fat
  • 3 tablespoons Stevia Powder
  • 3/4 cups Fat Free Milk
  • 4 Eggs
  • 1 cup Sour Cream, Light
  • 1 tablespoon Vanilla Extract
  • 1/4 cup Flour

Directions

Step 1. Pre-heat your oven to 350 degrees Fahrenheit and spray non-fat cooking spray onto a 9 inch spring form pan.
Step 2. Pie Crust: Crush graham crackers and combine with melted butter in a large mixing bowl. Form mixture evenly onto the bottom of the pan.
Step 3. Batter: Thoroughly mix stevia powder and cream cheese. Next, add and mix the milk and eggs. Finally, mix in the vanilla extract, flour and sour cream. Mix until smooth. Pour mixture evenly into pan.
Step 4. Bake for approximately 1 hour. Now, take a vacation. Just kidding. Turn off the oven and allow cooling in the oven for 4-6 hours. This part is important so all kidding aside: Don't skip this part! Finally, refrigerate the cake until serving. Makes 12 Servings.
