Diabetic Shredded Pork Recipe

My diabetic shredded pork recipe lets you have a classic American dish. Great for a tailgate or other get together.

I have reduced the sugar content and some of the sodium normally found in more traditional recipes. Some people complain about recipes that cut out high sugar and sodium content. Personally, I have a hard time eating these recipes now. I just like lower salt and sugar cooking.

Ingredients

  • 2lb Boneless Pork Shoulder
  • 3/4 cups Ketchup
  • 1oz Lemon Juice
  • 1/4 cup Celery (Diced)
  • 1/4 cup Onion
  • 1oz Vinegar
  • 1 tablespoon Worcester Sauce
  • 1 tablespoon Brown Sugar
  • 1/2 teaspoon Pepper
  • 1/2 cup Water
  • 5 Reduced Calorie Buns

Directions

Step 1. Put Pork in Crock Pot.
Step 2. Chop the onion and celery. In a large bowl, combine the diced onion and celery, and ketchup, lemon juice, vinegar, worcester sauce, brown sugar, pepper and water. Stir.
Step 3. Pour mixture over pork. Set the slow cooker to low and cook for 5-7 hours, or until pork is tender and pulls apart easily.
Step 4. Enjoy
