My favorite diabetic vegetarian pizza recipe. I like this recipe because it is easy to make and a little different since it is a white pizza. This recipe uses one of those refrigerated pizza crust you find in a can at the grocery store.
Admittedly, this recipe has a bit more saturated fat in it and sodium. As such, don’t eat it every day.
However, the recipe has been approved by a host of nutritionist and doctors from the CDC and NIH specifically for people with diabetes.
Diabetic Vegetarian Pizza Recipe

Ingredients
- 2 tablespoons Whole Wheat Flour
- 1 can Pizza Crust
- Fat Free Cooking Spray
- 2 tablespoons Olive Oil
- 1/2 teaspoon Dried Basil
- 1/2 cup Low Fat Ricotta Cheese
- 1 Small Onion
- 2 tablespoons Garlic (minced)
- 4oz Low Fat Mozzarella (minced)
- 2 cups Mushrooms (chopped)
- 1 Red Pepper (thinly sliced)
Directions
Step 1. | Preheat oven to 425 degrees Fahrenheit. |
Step 2. | Chop or slice the pepper and mushrooms. |
Step 3. | Spread flour on flat surface. Roll out pizza crust on top of the flour and roll out to desired thickness with rolling pin. |
Step 4. | Spray baking sheet with non-stick cooking spray. Put crust on sheet and brush with the olive oil. |
Step 5. | Mince the onion and garlic. Mix with basil and ricotta cheese. Spread on crust. |
Step 6. | Distribute mozzarella cheese evenly over crust. Do the same with the mushrooms and peppers. |
Step 7. | Bake pizza for 13-15 minutes, until the crust bottom is golden brown. Keep an eye on the crust so it doesn’t burn. |
Step 8. | Cut into 8 slices and enjoy! |
