Carrot Raisin Salad

  • 2 cups Carrots (Shredded)
  • 3 tablespoons Sour Cream (Low Fat)
  • 1/4 cup Raisins


Step 1. Shred the carrots, if you didn’t buy them already shredded. Next mix all the ingredients in a bowl. Make sure the carrots and raisins get thoroughly coated.
Step 2. Chill for approximately one hour, then serve.
Step 3. Note: If you buy the carrots pre-shredded, you may want to soak them in cold water for several hours, as pre-shredded carrots are often dried out and have lost turgor pressure.
