Scrumptious diabetic apple pie recipe! So good, the apples seem to melt in your mouth! Let’s start baking. Creating a pie that is suitable for the diabetic diet is one of the hardest cooking challenges. Often the filling is overly sweet or full of carbohydrates. However, the pie crust itself is where the challenge really lies.

  • 2 tablespoons Stevia Powder
  • 1/4 cup Flour
  • 1 teaspoon Cinnamon
  • 1/2 teaspoon Nutmeg
  • 6 Apples
  • 1/4 cup Flour
  • 1 tablespoon Stevia Powder
  • 3 tablespoons Olivio (butter Substitute)

Step 1. Pre-heat oven to 350 degrees Fahrenheit.
Step 2. Filling: Mix stevia powder, 1/4 cup flour, nutmeg and cinnamon. Core and chop the apples then put in bowl with dry ingredients. Lightly toss/mix together to coat apples. Put ingredients into prepared 9 inch Keebler Shortbread Ready Crust.
Step 3. Topping: Take 1/4 cup of flour, stevia powder and olivio and mix together. This mix should be crumbly in texture. Distribute evenly over pie.
Step 4. Put in oven and bake for approximately 40-50 minutes. Allow to cool and cut into 8 servings. Again, you may want to make smaller servings.
