This diabetic avocado salad recipe. I like this recipe because it is easy to make. I put the salad together then take it to work for lunch. The avocado is great because it makes you feel full, not bloated. No afternoon cravings for food!
Ingredients
- 2 cups Mixed Greens
- 1/2 cup Cherry Tomatoes
- 1 stalk Celery (diced)
- 1/2 cup Carotts (diced)
- 1/2 cup Avocado (diced)
- 1 cup Cucumber (diced)
- 2 tablespoons Newman’s Own Lite Raspberry Walnut Dressing
- 1 medium slice Peperridge Farm Lite style Wheat Bread
Directions
Step 1.

Chop the lettuce, tomatoes, celery, cucumber, carrots, and avocado. |
Step 2.

Assemble all ingredients in a bowl. |
Step 3.

Add dressing and toss. Wait to add dressing if you are assembling and taking to work. |
