This diabetic avocado salad recipe. I like this recipe because it is easy to make. I put the salad together then take it to work for lunch. The avocado is great because it makes you feel full, not bloated. No afternoon cravings for food!

Ingredients

  • 2 cups Mixed Greens
  • 1/2 cup Cherry Tomatoes
  • 1 stalk Celery (diced)
  • 1/2 cup Carotts (diced)
  • 1/2 cup Avocado (diced)
  • 1 cup Cucumber (diced)
  • 2 tablespoons Newman’s Own Lite Raspberry Walnut Dressing
  • 1 medium slice Peperridge Farm Lite style Wheat Bread

Directions

Step 1. Chop the lettuce, tomatoes, celery, cucumber, carrots, and avocado.
Step 2. Assemble all ingredients in a bowl.
Step 3. Add dressing and toss. Wait to add dressing if you are assembling and taking to work.
Step 4. Enjoy
