Diabetic Beef Stew Recipe

I made this diabetic beef stew recipe last night. I loved it and so did my whole family. While it tastes good, there are several aspects of the recipe that make it much healthier than a normal beef stew.
First, I use sirloin instead of stew beef. Yes, it is more expensive, but I typically use less than most comparable recipes. Portion control, does have its advantages!
Ingredients
- 1lb Beef Sirloin
- 1 Medium Onion
- 1 cup Carrots (Diced)
- 1 cup Celery (Diced)
- 14.5oz Petit Cut Tomatoes, No Salt Added (Diced)
- 6oz Tomato Paste, No Salt
- 1.5 cups Rutabaga (Diced)
- 1 teaspoon Thyme
- 1 teaspoon Pepper

Step 1.

Cut Sirloin into bite size pieces. Lightly brown the sirloin in a pan. You can choose to just add the raw sirloin to the crock pot. The meat should cook all the way through if you cook the chili for the full 8 to 10 hours. I prefer to brown it first, however. |
Step 2.

Chop the onion, carrots, celery and rutabaga. Add these ingredients and all other ingredients to the slow cooker. |
Step 3.

Set the slow cooker to low and cook for 8-10 hours. |
