Bran muffin’s seem to get a bad rap. Everyone thinks they are for older people who need extra dietary fiber. If you are older, then so what? You can’t be bothered with what people think! If you are younger, well, then you don’t know what you are missing.
But because we want you to try this great diabetic bran muffin recipe, we suggest you add some cranberries or other fruit to sweeten things up.
Ingredients
- 0.75 tablespoon Stevia Powder
- 2 tablespoons Brown Sugar
- 1 1/4 cup Whole Grain Flour
- 1 1/2 cup Quaker Oat Bran Cereal
- Salt Pinch
- 2 Egg Whites
- 1 tablespoon Olive oil
- 1 1/2 cup Fat Free Milk
Directions
Step 1.

Pre-heat oven to 400 degrees Fahrenheit and spray no fat cooking spray onto a 12 cup muffin pan. |
Step 2.

Combine the flour, stevia powder, baking powder and brown sugar. Set aside. Soak bran cereal in milk for 5-7 minutes, then combine and mix oil and egg whites. Combine all ingredients and spoon mixture evenly into muffin cups. |
Step 3.

Bake until tops are golden brown, approximately 20 minutes. One serving is one muffin. |
