Ingredients

  • 1/2 cup Canola Oil
  • 4oz Apple Sauce, Unsweetened
  • 2 teaspoons Vanilla Extract
  • 4 tablespoons Stevia Powder
  • 2 cups Whole Grain Flour
  • 4 Eggs
  • 1 cup Chopped Walnuts
  • 2 teaspoons Baking Powder
  • 2 teaspoons Baking Soda
  • 3 cups Grated Carrots
  • 2 teaspoons Cinnamon
  • 1/2 cup Crushed Pinapple
  • 1 teaspoon Salt
  • 2 tablespoons Fat Free Milk
  • 3oz Fat Free Cream Cheese
  • 1 tablespoon Butter, Unsalted, Light
  • 1 teaspoon Vanilla Extract
  • 2 cups Confectionary Sugar

Directions

Step 1. Pre-heat oven to 325 degrees Fahrenheit and spray no fat cooking spray on a 9 x 13 inch baking pan.
Step 2. Stir the eggs, applesauce, stevia powder and canola oil together in a large bowl.
Step 3. Next, add the salt, cinnamon, whole grain flour, baking powder, baking soda. Mix well.
Step 4. Now, add the pineapple, vanilla extract, walnuts, and carrots.
Step 5. Pour into the pan and bake for 40-50 minutes. Check often as cooking time can vary. An easy way to check is with the toothpick test. Stick the tooth pick in the middle. If it comes out clean, you’re done!
Step 6. Allow to cool completely before frosting.
Step 7. FROSTING INSTRUCTIONS: Combine and mix the cream cheese, confection sugar, vanilla extract, milk and the butter. You may need to add a little more milk in order to get a spreadable consistency of the frosting. Then frost, cut into 20 servings, and eat!
