Diabetic Cobb Salad Recipe

This may be a diabetic cobb salad recipe, but it is tasty good regardless of your health condition. If you have never tried a cobb salad, then do yourself a favor and start with this one.
We have also included a homemade salad dressing option if you do not have a dressing you already like. All you have to do is mix, shake and your in business!
Ingredients
- 4 Hard Boiled Eggs (Egg Whites Only)
- 2 cups Chicken Breast
- 1/2 teaspoon Paprika (Diced)
- 1 head Romain Lettuce
- 1 Avocado
- 2 Roma Tomoatoes
- 2oz Low Fat Feta Cheese (Crumbled)
- 2 teaspoons Olive Oil
- 1/4 cup Balsamic Vinegar
- 1 teaspoon Honey
- 1 Garlic Clove, Minced
- 1 teaspoon Dijon Mustard
- Lemon Juice (Approx 1 Lemon)
Directions
Step 1.

Rinse and dry romaine lettuce. Chop lettuce into approximately 1 inch pieces. You can place in one bowl and serve family style or evenly divide into four individual bowls. |
Step 2.

Boil eggs approximately 10 minutes. Peel shell and remove yolks (discard). Dice the egg whites, but not too small! Put on top of salad. |
Step 3.

Add 2 cups of diced Broiled Chicken to top of salad. |
Step 4.

Peal, pit and dice avocado. Add to salad. |
Step 5.
|
De-seed and dice the roma tomatoes and add to salad. |
Step 6.
|
Sprinkle the feta cheese and paprika on top of the salad. |
Step 7.
|
Dressing: In a small bowl, whisk together oil, vinegar, honey, garlic, Dijon and lemon juice, season with pepper. |
Step 8.
|
Drizzle dressing over salads and refrigerate any extra dressing for up to 4 days in the fridge. |
