Diabetic Gazpacho Recipe

Serves 6

  • 4 Large Tomatoes (Chopped)
  • 1 Large Cucumber (Chopped)
  • 1 cup Redo Onion (Chopped)
  • 3 cloves Garlic
  • 1/4 cup Red Wine Vinegar
  • 1 tablespoon Canola Oil
  • 2 tablespoons Cayenne Pepper Sauce (Mild)
  • 3/4 teaspoons Salt


Step 1. Put all ingredients in a blender. Blend until completely smooth.
Step 2. Chill the soup in the refrigerator for at 2 hours, if not longer. Not only do you want to serve thus soup cold, you want to give the flavors a chance to combine.
Step 3. Add some small diced cucumbers and parsley to garnish if you wish.
