Diabetic Lentil Soup Recipe

  • 2 cups Dried Lentils
  • 4 cups Cold Water
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 1 Medium Onion (Diced)
  • 2 cans Diced Tomatoes (14.5 Ounces)
  • 2 cloves Garlic (Minced)
  • 2 Bay Leaves


Step 1. Rinse the lentils and remove any stems or crushed pieces.
Step 2. Next, put all the ingredients in a large pan or Dutch oven and bring to a boil.
Step 3. Reduce heat, cover and simmer for approximately 2 hours. Lentils can take some time to soften so the time can be longer. You also may need to add additional water, as the lentils can soak up a lot.
Step 4. Note: You can also soak the lentils overnight to soften them up.
