Ingredients
- 2 cups Dried Lentils
- 4 cups Cold Water
- 1/2 teaspoon Salt
- 1/2 teaspoon Pepper
- 1 Medium Onion (Diced)
- 2 cans Diced Tomatoes (14.5 Ounces)
- 2 cloves Garlic (Minced)
- 2 Bay Leaves
Directions
Step 1. | Rinse the lentils and remove any stems or crushed pieces. |
Step 2. | Next, put all the ingredients in a large pan or Dutch oven and bring to a boil. |
Step 3. | Reduce heat, cover and simmer for approximately 2 hours. Lentils can take some time to soften so the time can be longer. You also may need to add additional water, as the lentils can soak up a lot. |
Step 4. | Note: You can also soak the lentils overnight to soften them up. |
