Diabetic Rhubarb Pie Recipe

  • 2 tablespoons Stevia Powder
  • 1 tablespoon Corn Starch
  • 1/2 cup Rolled Oats
  • 4 stalks Rhubarb
  • 5 Apples
  • 4 tablespoons Olivio (butter substitute)
  • 1/4 cup Brown Sugar
  • 2 teaspoons Cinnamon


Step 1. Pre-heat oven to 430 degrees Fahrenheit.
Step 2. Filling: Put chopped apples and rhubarb in large mixing bowl and set aside. Combine stevia powder and cinnamon in smaller bowl. Sift over fruit and toss together. Spread fruit mixture evenly in 9 inch Keebler Light shortbread pie crust.
Step 3. Crumble: Combine Olivio, brown sugar, and oatmeal. Mix thoroughly and sprinkle evenly over pie.
Step 4. Bake for 35 to 40 minutes or until done.
