Step 1.

Combine Pork and all ingredients in a bowl and refrigerate covered for at least 1 hour but even better overnight.

Step 2.

Preheat oven to 425. Place Pork in a baking dish (lined with foil) sprayed with PAM.

Step 3.

Roast for 10 minutes and then lower the heat to 350. |
Step 4.
|
Roast for 40 minutes more until the internal temperature of the pork reads 160. |
Step 5.
|
Cover and allow to rest in a warm place for 10 minutes. |
Step 6.
|
Slice and serve (if you like) with a compound butter made with the same herbs you used to marinate the pork. |
