Diabetic White Chili Recipe

Try this diabetic white chili recipe. It is super low in sodium and uses less carbs than most comparable recipes. It has always been a fan favorite at our house.
I would note that to achieve the low sodium results, you will have to take an extra step. This recipe uses dried kidney and garbonzo (chikpeas) beans. The next time you pick up the canned version of these two beans, you will be astonished with the amount of salt in them.
Ingredients
- 3/4lb Chicken Breast
- 1/2 cup Dry White Kidney Beans
- 1/2 cup Dry Garbonzo Beans
- 14.5oz Corn, No Salt Added
- 1 teaspoon Chicken Bouilion, Low Sodium
- 1 Medium Onion
- 1 teaspoon Cumin
- 1 clove Garlic
- 1.5 cups Water
- 1 tablespoon Olive Oil
Directions
Step 1.

Soak the beans overnight in seperate containers, approximately 8 hours. Place the containers in the refrigerator. The next morning drain the water. |
Step 2.

Cut chicken breasts into bite size pieces. Dice onion and mince garlic. Add these ingredients and olive oil to a non stick pan and cook until onion is tender and chicken is cooked through. |
Step 3.

Put all ingredients into the slow cooker. |
Step 4.

Set the crock pot to low and cook for 6-8 hours. |
