Ingredients
- 1lb Lean Beef (Cubed)
- 1/4 cup Flour
- 1/8 teaspoon Pepper
- 2 tablespoons Olive Oil
- 1/2 cup Onion (Chopped)
- 1 clove Garlic (Minced)
- 1/4 teaspoon Thyme
- 1/4 teaspoon Basil
- 1/4 teaspoon Oregano
- 1/8 teaspoon Rosemary
- 1 tablespoon Parsley
- 1/2 cup Dry Red Wine
- 1 cup Water
- 2 cups Tomatoes (Chopped)
- 2 cups Carrots (Diced)
- 2 cups Mushrooms (Sliced)
- 3 cups Potatoes (Diced)
Directions
Step 1. | In a small bowl mix the flour and pepper. Cover the lean beef with the flour and pepper mixture and place the beef in a Dutch oven or large pot. |
Step 2. | Brown the meat in the pot with the olive oil. Consider eliminating the oil if you want slightly less fat. The fat from the beef should be just fine or you can add a little water instead. |
Step 3. | Add the onion and garlic to the pot and cook until the vegetables are tender. |
Step 4. | Now, add the spices, water and wine. Cover the pot and simmer for approximately 30 minutes. Stir occasionally. If the mixture starts to thicken too much, you may need to add more water. |
Step 5. | Now, add the remaining ingredients (tomatoes, carrots, mushrooms, and potatoes) and simmer for an additional hour. Again, keep an eye on the pot and stir occasionally. More water may be necessary. |
