Just calling this a Dill Potato Salad recipe is really not doing this recipe justice. We add in sour cream, Dijon mustard, lemon juice and a whole host of other spices to give this simple recipe a professional restaurant quality taste.
It has very little fat and the carbohydrate count is fairly low if you watch your portion size.

Ingredients
- 6 medium slices Potatoes
- 1/2 cup Sour Cream (Low Fat)
- 1/4 cup Mayonnaise (Low Fat)
- 1/2 cup Onion (Chopped)
- 1.5 tablespoons Dried Dill
- 2 teaspoons Dijon Mustard
- 1.5 teaspoons Lemon Juice
- 1/4 teaspoon Salt
- dash Pepper
Directions
Step 1. | Peel Potatoes and cut into cubes (not to small). Boil potatoes until soft then allow to cool. |
Step 2. | In a large bowl mix ingredients with potatoes and chill for at least 1-2 hours. |
