This diabetic vegetarian wrap recipe is so much like a fiesta, we actually named it the Fiesta Avocado and Black Bean Wrap!!
The wrap is easy to make and is great even if you make it in the morning and take it to work or school.
Diabetic Vegetarian Wrap Recipe

Ingredients
- 1/2 cup Avocado
- 1/2 cup Black Beans
- 1/4 cup Cherry Tomato (diced)
- 8 " Tortilla
- 1 handful Romain Lettuce (shredded)
- 1 tablespoon Picante Sauce
- 1 tablespoon Red Onion
- 2 pinches Cilantro
Directions
Step 1. | Lay tortilla out on flat surface. |
Step 2. | Add diced avocado, black beans, diced tomatoes, lettuce, picante sauce and cilantro. |
Step 3. | Fold left and right sides into the center, then roll the remaining tortilla into a cylinder. Wrap with aluminum foil. If you are eating this right away at home, then there is no need to wrap in foil, unless you want to. |

The nutritional content above is approximate, per serving. If you need to have less carbohydrates in the wrap, you can only have 1/4 cup of black beans. This will reduce the carb content by 10 grams.
Also,if you can find whole wheat wraps, you typically get less carbs, and more nutrition. I always prefer whole wheat wraps, however I find that they can sometimes be difficult to find. For that reason, I have included the recipe with a regular white flour tortilla.
