Everyone loves the classic Waldorf Salad. This recipe uses the ingredients you know and love and makes this salad healthier and diabetic friendly.
While we did not include lettuce in the ingredients, feel free to serve this recipe over lettuce. The affect on the nutritional content is minimal.
Diabetic Waldorf Salad Recipe

- 2 tablespoons Sour Cream (Low Fat)
- 2 teaspoons Lemon Juice
- 3 Medium Apples (Peeled and Diced)
- 1/2 cup Celery (Diced)
- 2 tablespoons Walnuts (Chopped)
|Step 1.||Take the sour cream and lemon juice and mix together. |
Add apples, celery and walnuts to dressing and toss. Make sure all the ingredients are covered in the dressing.
|Step 2.||Chill and serve as is, or over a bed of lettuce. |
