I made this diabetic beef stew recipe last night. I loved it and so did my whole family. While it tastes good, there are several aspects of the recipe that make it much healthier than a normal beef stew.
First, I use sirloin instead of stew beef. Yes, it is more expensive, but I typically use less than most comparable recipes. Portion control, does have its advantages!
Second, I don’t use potatoes. Instead, I use rutabaga. I know it is unusual, but it is very good. Some people like to substitute parsnip. Check out the nutritional differences between the three ingredients at the bottom of the page.
Diabetic Beef Stew Recipe

Ingredients
- 1lb Beef Sirloin
- 1 Medium Onion
- 1 cup Carrots (Diced)
- 1 cup Celery (Diced)
- 14.5oz Petit Cut Tomatoes, No Salt Added (Diced)
- 6oz Tomato Paste, No Salt
- 1.5 cups Rutabaga (Diced)
- 1 teaspoon Thyme
- 1 teaspoon Pepper
Directions
Step 1. | Cut Sirloin into bite size pieces. Lightly brown the sirloin in a pan. You can choose to just add the raw sirloin to the crock pot. The meat should cook all the way through if you cook the chili for the full 8 to 10 hours. I prefer to brown it first, however. |
Step 2. | Chop the onion, carrots, celery and rutabaga. Add these ingredients and all other ingredients to the slow cooker. |
Step 3. | Set the slow cooker to low and cook for 8-10 hours. |
