Many of you have never heard of lentil soup. However, this recipe is good enough for you to try and it is very healthy. It has an amazing amount of fiber and is very low in fat.
While the recipe is higher in carbohydrates, understand that there is approximately 20 grams of dietary fiber! This is an insane amount of fiber!
Diabetic Lentil Soup Recipe

Ingredients
- 2 cups Dried Lentils
- 4 cups Cold Water
- 1/2 teaspoon Salt
- 1/2 teaspoon Pepper
- 1 Medium Onion (Diced)
- 2 cans Diced Tomatoes (14.5 Ounces)
- 2 cloves Garlic (Minced)
- 2 Bay Leaves
Directions
Step 1. | Rinse the lentils and remove any stems or crushed pieces. |
Step 2. | Next, put all the ingredients in a large pan or Dutch oven and bring to a boil. |
Step 3. | Reduce heat, cover and simmer for approximately 2 hours. Lentils can take some time to soften so the time can be longer. You also may need to add additional water, as the lentils can soak up a lot. |
Step 4. | Note: You can also soak the lentils overnight to soften them up. |
