Ingredients
- 2 cloves Garlic (Minced)
- 3/4 cups Onion (Chopped)
- 1 tablespoon Olive Oil
- 5 cups Chicken Broth (Low Sodium)
- 1 can Tomato Paste (6 oz., Low Sodium)
- 1 cup Green Cabbage (Shredded)
- 1 cup Zucchini (Diced)
- 1/2 cup Celery (Diced)
- 1 Medium Carrots (Diced)
- 1 can Garbonzo (16 oz., Drained)
- 1/3 cup Elbow Macaroni (Dry, Uncooked)
- 1 tablespoon Dried Basil
- 1/2 teaspoon Oregano
- 1/8 teaspoon Pepper
Directions
Step 1. | In a large Dutch oven, fry the onion and garlic in the olive oil until golden brown, about 4-5minutes. |
Step 2. | Add the chicken broth and tomato paste then bring to boil. Now combine all of the other ingredients, cover and reduce heat to a simmer. |
Step 3. | Simmering should take about 15-20 minutes, but you want to make sure the vegetables and macaroni are tender, so keep an eye on the pot, as it could take longer. |
