Diabetic Vegetable Rice Recipe

This vegetable rice recipe has lots of colors making it visually appealing and in addition to being very tasty. The rice is limited so the overall carbohydrate count is lower and more diabetic friendly. Try and use whole grain brown rice, rather than white rice.

Diabetic Vegetable Rice Recipe

Ingredients

  • 1/2 cup Onion (Chopped)
  • 1/2 cup Celery (Chopped)
  • 1/2 cup Carrots (Chopped)
  • 1/4 cup Corn (No Salt Added)
  • 1 tablespoon Margarine
  • 2 cups Rice (Cooked)
  • 1 cup Broccoli Florets
  • 1/4 teaspoon Salt

Directions

Step 1. Cook the margarine, carrots, corn, broccoli onion and celery in a large non-stick skillet. You want the veggies to be tender, but not too soft.
Step 2. Add the rice and salt and cook until the entire mix is heated throughout.
