Carrot Raisin Salad

- 2 cups Carrots (Shredded)
- 3 tablespoons Sour Cream (Low Fat)
- 1/4 cup Raisins
|Step 1.||Shred the carrots, if you didn’t buy them already shredded. Next mix all the ingredients in a bowl. Make sure the carrots and raisins get thoroughly coated.|
|Step 2.||Chill for approximately one hour, then serve.|
|Step 3.||Note: If you buy the carrots pre-shredded, you may want to soak them in cold water for several hours, as pre-shredded carrots are often dried out and have lost turgor pressure.|
